    Honey-Peanut Butter Cookies

    1 stick of butter
    1cup peanut butter (I use the creamy kind)
    1/2 cup sugar
    2/3 cup honey
    2 eggs
    1-1/2 cup flour
    1/2 teaspoon baking powder

    Cream butter, peanut butter & sugar.
    Add honey, eggs, then flour with baking powder.
    Roll into walnut-size balls, place on cookie sheet, and press with a fork to flatten, making a criss-cross or lattice design.
    Bake in moderate oven (375°F) for 15 minutes.
    Makes about 36.

    Note: I like to place a chocolate chip (immediately after baking) or peanut (before baking) in the center of each.

    Thanks, Jo. I will surely make these as soon as I get more honey. Have only a dab left and will get some at the Farmer's Market on Saturday.

      Barb, what kind of honey do they sell at your market? No Star Thistle this year up here because of the drought. I bought blackberry last week.

        I just baked a batch....used parchment paper on the cookie sheets (less mess).....and they are as good as I remember them!
        I used Orange Blossom Honey.

        Oh...and maybe it's because I'm in another clime than when I first used the recipe, but it looks like 12 minutes is all it will take. Watch your first tray closely, and go from there.

          Sounds good. While reading ingredients kept thinking of a graham cracker...LOL I use a lot of honey also, buy local supposed to help with allergies, I have yet to see that it helps..
