  • Chicken Quesdilla

    I love this recipe and these quesdilla's...one of mine and hubby's favorite...and if you buy the chicken already prepared or a rotisserie chicken its even faster.


    This copy cat recipe of Taco Bell’s quesadilla will change your life. The secret to the awesomeness of the Taco Bell quesadilla is their bold chipotle sauce



    Quesadilla Sauce: I messed up, this is the recipe I use...but will try the above one also...

    1/4 cup mayonnaise
    3/4 teaspoon sugar
    1/8 teaspoon cayenne pepper
    1/8 teaspoon garlic powder
    1/2 teaspoon paprika
    2 teaspoons jalapenos slices, minced
    2 teaspoons jalapeno juice
    1 dash salt
    1/2 teaspoon cumin
    1/2 teaspoon paprika




    Ingredients for Quesadillas:


    4 chicken tenderloins
    1 cup Monterrey Jack cheese, shredded
    1 cup cheddar cheese, shredded
    2 slices American cheese
    4 flour tortillas
    Vegetable oil


    Directions:
    Combine all of the sauce ingredients; stir until smooth. Set aside.Grill chicken in vegetable oil; cut into thin slices.
    Preheat a large skillet to medium heat.
    Lay a tortilla into hot skillet and sprinkle with 1/4 cup of shredded cheese and 1/2 cheese slice on one side of the tortilla.
    Put on top of cheese about 1/4 cup chicken slices.
    On the other side of tortilla, spread about one tablespoon of sauce.
    Fold tortilla over; press down gently with kitchen spatula.
    Cook quesadilla until cheese is melted.
    Slice each into 4 pieces.

        Oh it is good...and the recipe for the sauce below is what I use most..You can buy the fajita strips of chicken and beef in bags in the frozen section, saves a lot of time...because this is good with beef also.
        Your welcome...in fact, I just bought the stuff I needed yesterday..


        Forgot to say, I get the griddle out when I make these instead of doing them one at a time..
