    20-Minute Bruschetta-Chicken Skillet

    Ingredients
    1 tablespoon oil
    4 boneless skinless chicken breasts (1 lb.)
    1 can (14-1/2 oz.) HUNT'S® Diced Tomatoes, drained, liquid reserved
    1/2 cup KRAFT® Shredded Low-Moisture Part-Skim Mozzarella Cheese
    1/4 cup KRAFT® Grated Parmesan Cheese, divided
    2 tablespoons chopped fresh basil
    1/2 cup croutons, coarsely crushed
    Directions
    HEAT oil in large skillet on medium heat. Add chicken; cook 3 to 4
    min. on each side or until done (165°F). Meanwhile, combine
    tomatoes, mozzarella, 2 Tbsp. Parmesan and basil.
    ADD reserved tomato liquid to skillet. Top chicken with tomato
    mixture; simmer on low heat 5 min. or until mozzarella is melted and
    tomato mixture is heated through.
    TRANSFER chicken to serving plate; top with crushed croutons and
    remaining Parmesan. Yield: 4 Servings.

    Note: I just came across this, and thought it sounded good for future use.
    They don't say so, but it really looks like they served it over pasta. Linguini, maybe.

    Then I thought, using ground chicken, this would be nice on toasted Italian bread.

    Sounds good to me. I thought about getting the ground chicken and making it into an Italian meatball recipe type thing, only making it into patties, put a patty over a slice of Italian bread and then top with the mixture...lots of things to do with this...yummy

      Does sound good .... only thing I would change is the oil.....would only use a teaspoon mixed in with the spray .... I use ground chicken and ground turkey for some dishes I make...going to make some stuffed cabbage this week....using the ground turkey....I grind up assorted veggies to mix in too lessens the calories from the meat....plus I love vegetables. usually carrots, celery and onions..also use barley instead of rice...for more fiber. Think making small meatballs with the ground turkey or chicken would be a good idea too. Am really not into eating chicken anymore...even the legs that I used to love....ground meats seem more palatable to me.
      Money can't buy happiness, but it sure makes misery easier to live with.
