When I do meringues I have the meringue made before making the filling, once the hot filling is put in the cooled crust I immediately add the meringue and bake...I use a recipe called Never Fail Meringue and it hasn't failed me yet and it doesn't get weepy..Live simply, love generously, care deeply, speak kindly, and leave the rest to God

I don't remember seeing this anywhere on-line but a couple of large spoonfuls of marshmallow cream will keep the meringue from weeping and it looks lovely. Learned that while working for a short time in a coffee house. The cream keeps for a very long time.
