I was sorting through my recipes looking for some cookie recipes to make & stash in my freezer & came across my Oatmeal Cake recipe that I use. It is SO GOOD! I guess it use to be on the Quaker Oatmeal box way back when.
Oatmeal Cake
1 1/4 C Boiling Water
1 C Oatmeal
1/2 C Butter/Margarine
1 C Bwn & 1 C White Sugar(s)
2 Eggs - beaten
1 tsp Vanilla
1 tsp Bkg Soda
1 tsp Cinnamon
1/2 tsp Salt
1 1/2 C Flour
Topping:
1 C Bwn Sugar
1 C Shredded Coconut
1/2 C Cream or Half & Half
4 tsp Butter/Margarine
Pour water over oatmeal & let sit for 20 minutes. Cream butter & sugars then add eggs & vanilla. Add dry ingredients - mix. Now add oatmeal. Grease & flour cookie sheet. Pour in cake. Bake at 350 for 30 minutes. While baking, mix up topping. Put topping on cake while still hot/warm then brown it under the broiler until bubbly and toasty brown. Keep oven door open so you can watch it. It'll burn quickly, so it needs watched.
This cake is SO GOOD. Very moist and addicting. You'll keep going back for more.
