  • Bacon Tomato Cups

    1 lg can of Grand Biscuits
    1/2 C Shredded Swiss Cheese
    1/2 C REAL Bacon Bits (I use Aldi's packaged ones for $1.49)
    1 sm Onion - chopped
    2 small Roma or 1 sm reg Tomato - chopped
    1-2 tsp Basil
    1/2 C Real Mayo

    Combine everything but the biscuits. Split biscuits into 3 layers & press each layer into a mini muffin pan. Spoon mixture into cups. Bake @ 400 for 10-12 minutes. Let cool slightly before removing from pan.

    Yes, they can be frozen, but I'd then nuke them a bit before eating. They don't have to be eaten warm, but are better that way. They disappear very quickly every week when I make them.
