1 ear corn
2 pints cherry, grape, or pear tomatoes, halved (or quartered if large)
2 or 3 avocado, halved, pitted, peeled, and diced
2 scallions, thinly sliced
2 tablespoons fresh lime juice
1 tablespoon vegetable oil, such as safflower
1 pkg sweetener or 2 tsp sugar
Coarse salt and ground pepper
Cilantro
Cook corn and cut off kernels. Cut tomatoes, avacado, and scallions. Mix juice, oil, and sugar.
Combine all and add salt and pepper. Garnish with cilantro, if desired.
