Nutty Barley Bake.....TOH Oct/Nov 1999
1 C Medium Pearl Barley
1 Med Onion - Chopped
1/2 C Slivered Almonds (I just chopped whole ones)
1/4 C Butter/Margarine
1/2 C Minced Fresh Parsley (I didn't have fresh, so I used about 2 Tbsp Dried)
1/4 C thinly sliced Green Onions (I didn't have any, so I just left these out)
Salt & Pepper
2 Cans Beef Broth (14 1/2 oz each)
In skillet over med heat, saute onions, barley, & nuts in butter until barley is lightly browned. Stir in parsley, green onions, and S&P. Transfer to greased 2 qt baking dish. Stir in broth. Bake uncovered at 350 for 1hr and 15 minutes or until barley is tender and liquid is absorbed. PLEASE READ MY TWEAKS!
(other tweaks....I simmered a piece of beef one time & used that as one of my "cans" of broth then crumbled the meat & put it in the dish before baking. I also made up some add'l liquid with water & beef bullion and added that because my barley needed it. I added chopped mushrooms the one time. I saute my stuff in my largest iron skillet and baked in that also. I also baked my for at least 1 1/2 hrs)
This is SO GOOD. If you like barley, you've GOT to try this. The leftovers are great too.
