  • Soft Glazed Pumpkin Sugar Cookies

    Soft Glazed Pumpkin Sugar Cookies Makes approx 3-4 doz

    1/2 C butter or margarine
    1/2 C Veg. Oil
    1/2 C Pumpkin puree (canned pumpkin)
    1 C Sugar
    1/2 C Pwd Sugar
    1/2 tsp Vanilla
    2 Eggs
    4 C Flour
    1/4 tsp bkg soda
    1/4 tsp Cream of Tartar
    1/2 tsp Salt
    1/2 tsp Pumpkin Pie Spice (or more!)

    Glaze:
    3 C Pwd Sugar
    4 Tbsp Water
    1/4 tsp Pumpkin Pie Spice (or more!)

    Mix together butter, oil, pumpkin, sugars, vanilla, & eggs...mix until smooth. Slowly mix in dry ingredients until completely incorporated. Scoop 1 1/2 Tbsp...roll into ball(s), then flatten to 1/2" thick using the bottom of a glass. If dough is sticking (which it will) press the bottom of the glass in sugar (spice it!) before flattening the next cookie. Bake 8-9 minutes in 350 oven.

    While cookies are baking, make glaze. Mix all together until smooth (add orange food coloring if desired!). Glaze warm cookies. Let glaze harden 2-3 HOURS before serving or storing.

    I LOVE these cookies. That pumpkin pie spice makes them fantastic!
