Oatmeal Pie:
2 Eggs
3/4 C Sugar
3/4 C Oatmeal (Quick)
1/2 C Butter or Margarine- melted
1/2 C Coconut
3/4 C Karo Syrup (if you don't have enough...use your pancake syrup)
1/2 tsp Salt
1 tsp Vanilla
1/2 tsp Maple Extract (optional but I ALWAYS use it)
9" deep or 10" shallow pie shell
Mix all ingredients together then pour into shell. Bake at 350 for 50 minutes or until center is set...doesn't jiggle anymore.
Serve warm or cooled.
