I tried to find veal to make veal parmigiana and no one sells it apparently. I bought a veal shoulder (bone-in) and I am hoping I can get it thin enough to use. Will it have the same flavor as the "regular" veal or will it be a heavier taste?

Maybe I better stick to chicken parmigiana.

Val I don't care for veal so have never bought any so can't tell you about the taste. But as for the slicing, up here if you buy a large piece of meat all you have to do is ask butcher (or anyone in the meat dept) to slice it for you the way you want it.

This piece of meat isn't big enough for me to have asked them to slice it. It is like a big chop. I can cut the meat away from the bone and then pound it till it is thin enough. I just don't know how "strong" a taste it will have. The meat man I asked said he didn't like veal because none of it had any taste and he doubted it would be too strong.
