  • Pie dough question

    I have heard information but now that I need it, can't remember.
    What does it mean when pie dough keeps breaking as you are rolling it out?
    Too much something?
    Not enough something?
    Any help will be appreciated!

    The dough is either too dry or too cold. If it seems to be crumbling apart, work a few sprinkles of water into it, but try to handle it as little as possible. If it merely cracks at the edges when you run the rolling pin over it, it probably just needs to warm up a little. Allow it to sit on the counter for a few minutes, but don't let it get too warm, or the layers of fat will melt together and your crust will not be flaky. When you finally get it rolled out and into the pie plate, put it in the freezer for a few minutes and chill it again before using it.
    The only person you should try to be better than is the person you were yesterday.

      Thanks, Pat! We are going to make more pies! Doing a pie only once or twice a year is not enough to get good at it....

        Thanks, Pat. I usually just get the frozen pie shells at the store, but they really aren't satisfying.
