I used this to make cupcakes, and I used my own frosting on top.
AMALGAMATION CAKE (Jam cake)
1 cup sugar
1-1/2 cups melted butter
1 cup buttermilk
2 teaspoons baking soda
6 eggs
1 tablespoon cinnamon
1 cup jam (any kind)
1 cup raisins
2-1/2 cups all-purpose flour
Mix together.
Bake at 350° for 35 minutes, or til it tests done.
The original recipe says to divide among four 9" cake pans
(They will be thin layers)
The following filling.
Cake filling:
5 whole eggs, 2 cups sugar
1/2 cup melted butter
1/2 cup milk.
Cook in double boiler til thick. Remove from stove and add:
2 cups chopped nuts
2 cups raisins
2 cups coconut
Mix and spread between layers and on top.
My note: after the first day, this does have a chewy fruit cake texture.
I would add 1 or two bananas to this to keep it more moist.
I also think an Apple Pie Spice would be a very nice substitution for the cinnamon, and double the amount called for. Also, I used craisins.
My aunt gave this recipe to my mother as a better substitution for fruit cake (which nobody seemed to like).
