Mickie's Cottage Cheese Bread
1 Tbsp Dry Yeast
1/2 C Warm Water
1 Tbsp Sugar
2Tbsp Butter/Margarine
1 Egg
1 C Cottage Cheese
1/2 tsp Baking Soda
1 tsp Salt
3 C Flour
Optional extras....dill & chives or cinnamon & raisins
In medium bowl combine the water, yeast, & sugar...let rest for 5 minutes. In large bowl (I use my KA mixer) combine the butter, egg, cottage cheese, & yeast mixture (and optional extras). Now add the dry ingredients until all combine. Kneed. Grease a large bowl & let dough rise to at least double.
Punch down and shape into either one large or two smaller rounded masses & place on baking/cookie sheet (I use my stoneware). Let rise for 20-30 minutes then bake at 350 for 25 minutes.
