    very chilly good morning ..

    ah ,, Fall is here ... darn.

    Coffee is hot. today it is Carrot Cake Cupcakes. with sour cream icing, with an Orange colored "carrot" on top... fresh from the kitchen of Donna,,,....( these are really good!.)..

    Got to visit with Donna yesterday... she baked , we talked.. next week I make grease balls one morning...so happy she is living in Pa and only a couple miles from my house!..

    David was working at sawmill a bit yesterday... he is being "reborn".. sure hope he can continue doing this off and on. good exercise and great for his moral..

    Today is big party for Great-grandson first birthday ... we are the only Great s he has.. and he is our only Great... he is firstborn in so many ways.. thus the big party.... they rented the big room at the IOOF hall. ...

    Good SUNNY Morning!

    Yesterday was crazy...even for me. All I had on my agenda when I left for town was to bake a birthday cake & some cupcakes. Came home to a msg from the restaurant that they needed a carrot cake then later on a lady called & wanted two pies for this morning. When Aunt J arrived the cakes were all made and I was starting to make the icings. I tried a new recipe for the cupcakes....white wedding cupcakes. You start with a regular white cake mix and then start adding other ingredients and they turn out dense & moist...and they did!!!! I'm super pleased. So I got everything iced, carrot cake delivered, and pies baked all before heading down to the football field to watch my niece perform during half time. She / they did a great job. Did you know it takes 45 freaking minutes to play 7 minutes of football?

    This morning I'm heading down to the church to work on a meal for the homeless shelter. We are serving them chicken & biscuits, mashed potatoes, carrots & onions, applesauce, and pie. I made the gravy at home yesterday from all the broth I ended up with from cooking the chicken. So today we just have to work on the biscuits, potatoes, carrots, and applesauce. The pies are being donated. I'm actually NOT donating a pie because we got plenty from other church members. If it's not too late when we are done, I'm heading to the orchard to get 6 more bushels of apples for our applesauce/apple butter making next week. I'm so excited to see my friend Maureen. Today is her actual birthday, but we'll celebrate it when she comes. I take her out to dinner and make her pumpkin roll for her cake. Not sure what the rest of the day will bring. Oh yea....LAUNDRY!!!! May actually cook us a dinner we'll all eat together instead of this throw together stuff. I think it would be easier to go out & get a regular job.

      Good Morning.

      Janet, even if Dave just goes to the sawmill, that would be good for him. He doesn't have to do any work - just sit back and watch. Have fun at the party!

      Donna, absolutely, a regular job would be MUCH easier than what you are doing. But you probably wouldn't be as happy.

      Went to WM at 11a. Big mistake. Had to park a couple of miles away. But when I got in the store finally, there were not that many people. Very odd. Spent more time chatting with old friends than shopping.

      Prepping my King Ranch Chicken for tomorrow and will find out what John thinks he would like for lunch.

          Morning all

          It's my Saturday to work - and for once I'm glad because it got me off the hook from helping our friend Danny move.

          Slow right now - mostly check-outs today. GA & AL were on Fall break from school last week so we had a full house. Lots of cleaning going on, but only 5 check-ins today.

          I'm off to do some billing. Y'all have a good 'un.
          The only person you should try to be better than is the person you were yesterday.

            Donna, did youfind the cupcake recipe on Pinterest? I have seen one that says The Best...And, will you share the sour cream frosting recipe
            aunt Maye mentioned? I don't think I have ever had a frosting made with sour cream.
            My super good friend Barbara just got out of the hospital. She has gastroentro-something, basically her stomach does not digest food and she has had a pace maker in her stomach to try and get it to work, but had to go in for a pick line and next week will meet with a surgeon to have a feeding tube put in. Anyway, she was saying she bought some tapioca to make just before she went in the hospital and I thought I would make some today for her. I have never made it...Why? I have no idea. I like it, my mom used to make it when I was much younger, but I am more of a rice pudding person and I hate to admit it, but I buy the Kozy Rice pudding in the refrigerated section.
            Rainy and windy and two events got cancelled that would have been this weekend. Including the Free flu shots that will be a drive-thru event. The State gave a huge amount of the shots to our county to see how fast and how many could be vaccinated in a short amount of time in case of a pandemic. Now the shots will be given on the 30th and that means I have to go before I go to church...and hope it all works out and it would have been so much better today, Saturday.
            Ok, I'm done. Off to dry and style my hair and then to the grocery store. Nothing else on the Must Do list, so I am free to pick and choose!
            One more Donna question: do you keep carrots on hand all the time for these cakes? I am most impressed by the carrot cake production you have. They are so labor intensive for me.

              Ok...to answer your questions....I use a CREAM CHEESE frosting on the carrot cakes...I don't have a sour cream icing recipe. I got the cupcake recipe off of FB and it used sour cream in it. You DEFINITELY want to try this recipe...I'll post it later in the kitchen. Yes, carrot cakes are labor intensive plus the ingredients are costly and that's why I charge $20 for a cake and even that's cheap. I do keep carrots on hand, but what I have a tough time keeping is raisins. My husband eats them by the handful and wipes them out sometimes w/o telling me. I do try to keep a new canister of raisins in the pantry and hope he doesn't raid that one too. I'm of the mind set that if you are going to make a mess, you might as well make a big mess. I grate unpeeled carrots in the food processor. Aldi's crushed pineapple is the best. I try to pre-measure all the ingredients so that once I start, I can mix up the cakes quickly. I bake the 4 pans plus the 6 cupcakes all at the same time. I do the 6 cupcakes because then the pans don't over flow.

            Warmer than normal weekend ahead according to the weather guys. I'll take it! Forgot Andrew had early dismissal yesterday and Sierra and I picked him up coming up the hill..oops! He was happy walking home with the other kids but that is a long haul for these kids and a couple that live back here are very young twins. Andrew was with the older twins because he thinks the younger are 'just disgusting' and last year the bus driver assigned seats and one of them fell asleep on his shoulder....two sets of twins back here...strange! i finally got my cleaning finished and the place has a different look with a layer of dust gone. Picked up things that had been laying around. Took all the sun screens and pool stuff downstairs. Opened up the curtains on windows, steamed the floors and did not cook. Drew came in and made himself a couple of grilled cheese and I have no idea what his father ate. When Sierra came back from meeting with her advisor she had brought us sandwiches so I was fine. I think Jon needs to run to the big mall today and I may ride along since my chores are all done. Bed bath and Beyond carries a certain furniture coaster and he needs to move some things in the boy cave to start painting. I just personally love Bed Bath and Beyond. A quick bite out since he going to a fancy smancy place this evening with kate and my nephew. Sierra said yesterday she misses not living here and thinks about moving back. That will turn her father's hair white! Mommy dearest is acting up as only she can in her passive aggressive ways and the kid does not need any pressure. She is mired down in homework and work and next semester is taking 5 classes and one is chemistry plus another math class. Everything is computer and these test are timed and she is doing ok but is slower than the computer. Andrew is the same way...he understand the math and can do it but is slow so it takes forever and you just want to do it for him to get it finished! He insisted he do spelling with his mother Thursday night and that was a disaster since he just pulled a fast one and told mom he did it with dad and it never got done and then he had to show the paper to his dad and was there some yelling around here for a few minutes last night. Then his father calmly said that is the last we will talk of it but it will never happen again and off they went into the sunset to do whatever they do in the boy cave. Drew knew he was in trouble when he dropped his backpack so hopefully he understands. Just work on the spelling and do it just DO IT! I knew Jon was getting worked but he thinks his kids wouldn't do that and of course they would because they are kids. He brought home a bunch of wonderful papers and then this spelling test that stood out like a sore thumb! The only time he ever gets yelled at by his father is over spelling and I swear that is true. Jon does not yell or scream or punish his kids..he talks and they both crumble when he raises his voice at them so you would think Andrew would get a grip and just do the damn spelling. Think I will go in and shower so I will be nice and clean when the bus leaves for Bed Bath and Beyond...and lunch out of course! Happy weekend everyone...this last week flew by!

              Good morning. We got to CA's border while it was still daylight.
              I spent only an hour at the Cancer Center waiting for lab results, which said my numbers climbed up and I didn't need the infusion!
              We're packing the car to check out of this motel , have breakfast, then get to the next stop.
              Tomorrow is the wedding!!!

              Well, gotta close. We're leaving now.

                .... hey , I googled and there is such a thing as sour cream icing... I will have to make it some day for fun...

                Elaine ,, I told David just to over,, and watch.... but he wouldn't go....could not stand by and watch a clumsy boy do his job.. ... can kind of understand how he felt.. I hope he can go over now... IF they will Just listen to me about LIMITING the amount and time ...an hour or so is great .. 2-3 hours is toooooo much.. but was nice to see him happy..

                see you all in the morning .. going to church with a piano student and parents. she is playing the piano at offertory time... I had just gotten the shingles when she played earlier in summer. and had to miss it.. so .God Willing ,I will make it tomorrow..
