    i found this in a Home Ec teachers' cookbook. The contributor said it was from her Dutch great grandmother.

    Serves 6

    4 large potatoes
    4 large carrots
    1 onion
    salt and pepper
    Half and half
    Butter
    Peel potatoes, carrots, and onion and cut into large chunks as you would for mashed potatoes. Cover with water and boil until tender. Drain off water and allow to stand a few minutes for vegetables to dry off.
    Mash with a potato masher, adding salt and pepper to taste and half and half as required to make the consistency you like.
    When the mixture is all fluffy and a beautiful shade of pale orange, serve it with the butter on top. Serve with gravy the same way you would regular mashed potatoes.

      I haven't heard of it, either. But it sounds like it's worth a try!

          Sounds good to me, that is why I like fixing a roast so I can mash all of the veggies together and had a pat of butter.
