Lemon brownies

  • Lemon brownies

    This is from the blog Rita may recipes.
    She started tihs one with " This is a good treat for someone tht doesn't like chocolate. (I cant believe I just typed that.)"
    That got my attention!

    3/4 cup flour
    3/4 cup sugar
    1/4 tsp. salt
    1 stick butter, softened
    2 eggs
    Juice from 1/2 lemon (about 1 Tblsp.)
    zest from 1/2 lemon (about 1 tsp.)
    Combine the flour, sugar and salt in a large bowl.
    Mix in the softened butter.
    In another bowl whisk the eggs with the lemon juice and zest.
    add to the larger bowl and mix well.
    Pour into prepared 8x8 pan.
    Bake at 350 * F. for 25 minutes.she said you can double the recipe and pour in a 9x13 and bake for 5 minutes longer, 30 minutes.
    I did it so save time today and was not happy with the results. I will go back to single batches.Remove and let cool and then glaze.
    Glaze:
    1/2 cup powdered sugar
    1 T. lemon juice
    additional zest
    stir together and spoon over the cooled brownies (now called Lemonies!)

    OK...what makes them a "brownie" vs a lemon bar?

      Probably the texture, Cookie.
      The lemon bars I'm used to have a pudding-like topping, and topped with powdered sugar instead of glaze.
      This sounds like a more dense recipe, likened to brownies.

        Yes, at the end of her recipe Rita says she has renamed them Lemonies!
        And like I said, I am not making htem in a double batch in a 9x13 again. I like the way the recipe turns out in a regular 8x8 pan.
        And I am always generous with the zest!

          printed it.....Marianne will love em...she loves lemon anything.. and does not like chocolate anything....

              I love lemon anything too and shall attempt these. Will pick up some lemons today. Just thinking Paula said she wasn't happy with the results of a 9 X13 pan maybe two 8 X 8 pans would work at the same time in the oven if one wanted a double batch.
