Horseradish Potato Salad

OMG! I will make this soon. I like the way you think on the adding the scoop of Horseradish. Yes, please! I'll get the stuff next Aldi's trip. I get the Horseradish at Save A Lot. It's just pure ground up Horsey and it's made by the Seminole brand. Good stuff. Thank you Cookielady. You're the Bombe Diggidy Doo Wah!

Horseradish Potato Salad

4 lg Potatoes (cook & peel)
4 slices Bacon (cook & crumble)
4 Eggs (hard boil & peel)
1 sm Onion or 3 Green Onions - chopped/sliced

1/2 C REAL Mayo
1/1 C Sour Cream
2 Tbsp Horseradish
1 Tbsp Chopped Parsley
Salt & Pepper

Cook, peel, & chopped first 4 ingredients and place in lg mixing bowl. Now mix up dressing ingredients and pour over potatoes...mix.

I no longer measure. Sometimes I add more eggs & bacon. I also just scoop out a big amount of horseradish & add it to the sauce.
