    Wedding Soup

    Whole Chicken

    Meatball mixture:
    1/2 lb Pork Sausage (plain)
    1/2 lb good Hamburger
    2-3 slices of Bread
    Milk
    2-3 Tbsp Parsley
    1/2 C Parmesan Cheese
    2 Eggs
    Salt, Pepper, Garlic Pwd, Oregano, & Basil


    Chicken Bullion
    Spinach (10 oz frozen)
    Anti Pepe Pasta
    Carrots
    Onion
    Celery

    Cook a whole small chicken in a large pot. Once that's done, cool, debone, and cut up your chicken....set aside. Now make meatballs. First soak your bread with milk. Now combine the rest of the meat ball ingredients. Bring a medium sized pot of water to a slow boil. Take a small chunk of meat mixture in your hand and start pinching small "balls" into the water. They'll be done when they start floating to the top. Scoop them out & set aside. When you are done making all the MB, pour that broth into the chicken broth. Now pre-cook a box of Anti Pepe pasta then set aside. If you don't precook it, they'll soak up a ton of your broth. To the broth, add bullion, spinach (thawed & squeezed dry), very thinly sliced carrots, celery, chopped onion, salt & pepper. Then add meats & pasta. Simmer until veggies are cooked.

    If you'd like to make a smaller batch & think this is something you'd make more than once, you can make the batch of meatball mixture, and freeze part of it for the next time.
