  • Pineapple Black Bean Salsa



    The secret to this is the marinade. You can pretty much put any kind of veggies in it you like.
    I've served this with all types of chicken, fish, fish tacos, and just with Scoops. It always goes over GREAT with everyone!

    3/4 C sugar
    1/4 C vinegar
    1/8 C oil
    Juice and zest of 1 lime

    Heat sugar, vinegar, oil until sugar dissolves. Cool and add lime juice & zest. Pour over vegetables and marinate overnight.

    Vegetable suggestions:

    Black beans (drained & rinsed)
    Crushed pineapple (I've used all kinds of pineapple but prefer the crushed)
    Corn
    Green, red, orange, bell peppers
    1 minced jalapeno
    Red onion
    Small jar of pimentos

    Just before serving, add chopped fresh cilantro and a bit more zest.
