  • Mexican Street corn

    My friend's directions:
    Corn on the cob
    Mexican crema ((in a jar with refrigerated Cream cheese area at my stores)
    Cotija Mexican cheese

    Boil corn till done.
    Drain cooked corn. Brush on crema and sprinkle on grated cotija cheese.
    Salt and pepper at the table.

    If you look on Pinterest there are a lot of variations, including Grilled versions.
    I saw recipes calling for Parmesan cheese, but I think the Mexican cotija cheese grated is better.

    Asiago might work? It's a salty cheese.

    Darn! I'm off all cow dairy these days, doc's orders.

          We were split 50/50: Becky likes the original better but I really liked the Asiago...
          I made it again as corn on the cob. Mother next time I am making it as a salad.

            Good to know.
            I just sprinkled Parmesan over E's mixed veggies. He loved it. But he snacks on Asiago.

            I can have only feta cheese these days....I've found no other goat cheeses in the stores.

              I always eat corn on the cob as is.....usually cook several of them and refrigerate......eat half for a snack .....as is.....sometimes I warm them but most of the time eat them cold.
